From what I can remember from the lore, changelings have different personalities for each of their 'faces', and thus person A face A would be in a relationship with person B face B, and would not be attracted to person B face C or any other identities

that being said, partners whose love for each other trancends identity would be a really sweet story

DS9 does have such an episode. In "Rejoined", Jadzia Dax meets Lerana Kahn and it is revealed that their past symbiotes were married to each other. Their love to each other still lingers, despite the fact that they are both female now.

While gay is a catch all it also tends to be used specifically for male/male couples as well because there isn't a term for gay male couples like there is for gay female couples. Hell, up until shockingly recently there wasn't even a flag for gay men. For everyone else that the rainbow is supposed to cover but nothing specifically for gay men.

It's interesting being a genderfluid person married to a woman.

Sometimes she is straight and sometimes she is a lesbian.
