You have to be desperate and uncultured to put something which turns brown in 30 minutes on a deli sandwich (I'm gay)
If you mix in lemon juice, then the color change will be slowed. It also tastes nice.
Or lime juice
Also, guacamole β avocado. It takes a long time for guacamole to turn since it's mixed with lime, salt, etc.
Throw some gruyere on there instead
