Some do. I like positioning on a grid as a part of combat. It rewards tight play and understanding the mechanics. When I DM though, it depends on the playgroup. I think most people prefer guesstimating and just applying the rule of cool

I have really enjoyed using FoundryVTT. A one time payment for the software and then you can self-host the server easily. I don't know if that is outside your criteria. If you aren't looking for VTT battle mapping though, it's probably more than you need. I'm still using Discord for voice since that is where my players are at but I want to get away from it too.
That's exactly where I'm at too. The side plots are more self contained and feel easier to plan since they don't have to tie in
Lots of improvements in the past few versions. I use it every week and love it. 5E D&D system fwiw
My Mac-using players do still seem to have issues with some features and the autoroller module I use but its workable
